I did the Laugavegur Trail with Feast in the Wild (aka Einar). I signed up as a solo traveler (I'm in my 30s), with limited mulit-day hiking experience. We actually had to change trails a few days before we were supposed to start because the original trail was deemed to treterous and wouldn't be as fun. Einar communicated this to me and let me know the new plan (instead of hut to hut, we'd be tent camping). He rented us all the gear we'd need for this last minute change. I was a little hesitant at first, since I imagined being in a mountain hut each night, but once on the Laugavegur trail, I was so happy we were able to camp out in tents. The weather was fantastic, except one day of rain (but, hey, that's expected). All of the information Einar provided before the trip was incredibly helpful and throrough - THANK YOU for those lists and your comments on each item.
Now, the best part- THE FOOD! Einar caringly prepared all our breakfasts and dinners and desserts, and provided all the goodies so we make our own sandwiches each day. Filfulling oatmeals and fruit for breakfast, and dinners ranged from grilled cod and vggies, mushroom risotto, tacos, lamb and potatoes, salads, Icelandic hot dogs, and more! He showcased the best of Iceland and educated us about the food, the land, the geography, and the dynamic state that is Iceland. My favorite part was foraging for berries that we used in a desset!
